! How to prepare a cheese board

What to buy

For variety and interest, choose at least five types of cheese that offer contrasting flavours, colours and textures, such as creamy goat, semi-soft brie, tangy blue and firmer cheeses.

How much to buy

If the cheese board is one of several appetizers served, I usually allow 60 to 90 grams of each cheese per person. If the cheese will be the only item served, or will be served as a post-dinner course, I allow a more generous 120 grams of each cheese per person. If that sounds like too much, you won't mind having leftovers. If you think it's too little, buy more.

How to serve

I like to unwrap and set my selection of cheese on the board to warm at room temperature for at least 90 minutes before serving. I loosely cover the board until ready to serve. This still allows the cheese, like fine wine, to breathe, but will prevent them from drying out. To avoid the muddling of flavours, if possible, have a different knife for each type of cheese served. Accompany the cheese with such things as crackers, toasted baguette slices, fresh and dried fruit and nuts. Be sure to have information at the ready on the types of cheese served. Your guests will want to know what they are and where to buy them.
