Saltspring Island Cheese Company
Owner David Wood started making cheese on his Saltspring Island farm in 1994 and, when he was finally happy with his product, started selling it in 1996. Since then his company has grown to the point where its product is available in several other provinces. The company is best known for its addictively good chèvre; a soft, fresh goat cheese sold as is or flavoured with such things as lemon, garlic, white truffle and basil. They also make several other types of goat cheese, such as Juliette, a style of Camembert, and a fantastic feta cheese called St. Jo. They also produce sheep's milk cheese, such as Montana, a firm cheese with a sweet, mild flavour that has small amount of goat's milk in it for textural reasons.
