Just a short walk from Willows Beach in Estevan Village is Paprika Bistro. In a warm contemporary room with local art, in an old building with beautiful detail, George (of Szasz’s on South Granville) & Linda Szasz (seven years at Bishop’s) pay homage to three generations of recipes with classic bistro fare.

While 1/2 roasted duckling with a sour cherry & ginger sauce & daily housemade sausages such as pork merguez, rabbit & blackbean or prawn & scallop are menu mainstays, locally grown organic produce, island veal and fresh seafood rule the daily features.

Anyone who has run their own restaurant will tell you the hours are horrendous. You never get a day off and the minute you set money aside, you have to spend it. The day the bar fridge breaks down is the same one that the toilets flood. The pilot light in the oven won’t work, all of your deliveries are late and you need to act as if you don’t have a care in the world because it’s your job to put other people at ease – even when someone complains about the food after they have eaten every bite of it.
